Our head bartender walks through the season's new list โ from spiced rum highballs to a smoked-fig old fashioned.
The seasonal brief
Five new pours joined the Cygnet Bar list this autumn โ each built around a Kent-grown or Kent-distilled ingredient and designed for the slower evenings that arrive with the season.
The aim was simple: drinks with depth, warmth and a little theatre, without losing the clean balance our regulars expect from the bar.
Signature pours
The smoked-fig old fashioned has become the early favourite, stirred down with spiced syrup and finished with a fragrant garnish. A pear and ginger spritz brings the lighter end of the list, brightened with citrus.
There is also a spiced rum highball, a bramble with local fruit notes, and a short, aromatic after-dinner serve for guests moving from Swagat into the bar.
What to pair with them
The richer cocktails sit beautifully alongside tandoor dishes and darker spices, while the spritz-style serves are ideal before dinner or with a lighter snack at the bar.

When to visit
Early evening is best for a quiet first drink; later service brings a livelier Cygnet atmosphere as hotel guests, diners and Hythe locals cross paths.
